Pre-heat the oven and place the sausages on a baking tray before placing in the oven- cooking until they are light brown and cooked through

Whilst the casserole is cooking, mash your potato, adding a small amount of butter and seasoning to your taste. For smoother potato add a splash of milk (or use a potato ricer instead of a masher for a super smooth texture)

Sausage Casserole

Served with mash potatoes, we use pork sausages, but chicken, turkey or vegetarian sausages work really well too.

Butterbeans are a great source of protein and fibre and to make this recipe even more nutritious throw in any vegetables that you like. We love carrots which are sweet enough for any age to enjoy

In a large casserole dish or frying pan add the onion and peppers and cook gently, stirring occasionally to avoid sticking as the onions caramelise- about 10 minutes

  • 450g pork sausages (why not experiment with the kind of sausage you use such as Lincolnshire, pork & apple or even chorizo)
  • 1 onion (chopped)
  • 1 can baked beans
  • 1 can Kidney beans
  • 1 can butter beans
  • 1 can chopped tomatoes
  • 2 red peppers
  • Pinch of mixed herbs or fresh parsley/ basil
  • 1 tablespoon of tomato puree
  • 2 bags of potatoes
  • Butter (to your taste)
